Pour the mixture through a fine-mesh sieve into a bowl, pressing it gently with the back of a spoon to extract as much liquid as possible. Discard the remaining skins and seeds.

What remains should be glossy, intensely blueberry-scented and almost jewel-like in colour.

3. Add the Cream

Pour ½ cup of double cream into the strained blueberry purée. Fold the two together slowly using a spatula, taking care not to whisk or introduce too much air.

The mixture should become smooth and velvety, with a deep violet colour and a luxurious, almost dessert-like consistency.

4. Build the Drinks

  4. Fill the serving glasses generously with ice, then divide the blueberry cream mixture between them. Slowly top each glass with chilled sparkling water, allowing the bubbles to rise through the deep violet base.
  5. Finish with a few whole blueberries and a fresh sprig of mint. Serve immediately, while the soda is icy cold, softly marbled and still alive with fizz.

Notes

Store any remaining blueberry cream mixture in a sealed container in the refrigerator for up to 3 days. For the brightest flavour and silkiest texture, however, it is best prepared as close to serving as possible.
