Honey Lemon Halo Spritz

Honey Lemon Halo Spritz

This drink slips effortlessly into the new wave of honey-kissed and lemon-bright mocktails that feel beautifully intentional — not just “no alcohol,” but genuinely grown-up. It’s just as at home at a sunlit brunch as it is on a party table, or in your hands on a slow afternoon when you want something refreshing that still feels considered. If you love drinks that look like you fussed (but secretly took five minutes), this one absolutely deserves a spot in your rotation.

Ingredients

You’ll need:

• 1¼ oz golden honey
• 1 oz freshly squeezed lemon juice
• ¼ oz sala syrup
• ¼ oz butterfly pea juice (for that dreamy colour shift)
• Soda water, to top
• A lemon wheel, for a pretty little finish

Method

How to Make It

  1. In a tall glass, stir together the honey, fresh lemon juice, and about 1½ oz of soda water. Mix until the honey completely melts into the citrus — no sticky bits left behind.

  2. Fill the glass generously with crushed ice, then top with more soda water, leaving a little space at the top for those gorgeous layers.

  3. Slowly drizzle the sala syrup over the ice so it gently sinks and creates a soft, sunset-style layer.

  4. Carefully pour the butterfly pea juice over the top. Watch the colours bloom and shift into that dreamy gradient moment. (This is the “wait, what?!” part.)

  5. Finish with a bright lemon wheel on the rim for that fresh, citrusy pop.

Serve straight away while it’s sparkling and vibrant — and enjoy your Honey Lemon Halo Spritz in all its shining glory.

Helpful Tips

• Be sure to stir the honey and lemon juice thoroughly with the soda water before adding ice. You want the honey completely dissolved so the drink stays smooth and evenly balanced.

• When adding the sala syrup and butterfly pea juice, pour them slowly over the crushed ice. A gentle hand keeps those beautiful layers intact and gives you that eye-catching colour gradient moment.
