- In a tall glass, stir together the honey, fresh lemon juice, and about 1½ oz of soda water. Mix until the honey completely melts into the citrus — no sticky bits left behind.
- Fill the glass generously with crushed ice, then top with more soda water, leaving a little space at the top for those gorgeous layers.
- Slowly drizzle the sala syrup over the ice so it gently sinks and creates a soft, sunset-style layer.
- Carefully pour the butterfly pea juice over the top. Watch the colours bloom and shift into that dreamy gradient moment. (This is the “wait, what?!” part.)
- Finish with a bright lemon wheel on the rim for that fresh, citrusy pop.
Notes
Be sure to stir the honey and lemon juice thoroughly with the soda water before adding ice. You want the honey completely dissolved so the drink stays smooth and evenly balanced.
