Use very cold cream: For the lightest, fluffiest texture, chill the cream, bowl and whisk for 15 to 20 minutes before whipping. Cold cream traps air more effectively, creating a smoother ice cream.
Stop at soft peaks: Whip only until the cream forms soft, billowy peaks that gently fold over when the whisk is lifted. Overwhipping can make the finished ice cream grainy rather than silky.
Add the sakura flavour gradually: Cherry blossom extracts and syrups vary greatly in strength. Start with a smaller amount, taste the mixture, and adjust if needed. The flavour should be delicate and floral, never overpowering or soapy.
Fold gently: When incorporating the condensed milk and flavouring, use a spatula and fold rather than stir vigorously. This preserves the air in the whipped cream, helping create a soft, scoopable texture.
Elegant garnish ideas: Edible cherry blossoms, candied rose petals, white chocolate curls, fresh raspberries or a sprinkle of toasted pistachios all complement the delicate floral flavour beautifully.
Make it extra indulgent: Fold in small pieces of white chocolate or a swirl of cherry compote just before freezing for added texture and visual appeal.
