Golden Crispy Air Fryer Arancini with Melty Cheese Centres
Imagine breaking through a golden, crunchy crust to reveal creamy risotto and a stretchy mozzarella centre. These Air Fryer Arancini deliver all the comfort and flavour of traditional Italian rice balls without the need for deep frying. Perfect for sharing, snacking or entertaining, they’re a delicious combination of crisp, cheesy and utterly irresistible.
For the Parmesan Risotto - Preheat the oven to 180°C (160°C fan). Place a medium casserole dish, Dutch oven or other ovenproof pot over a medium heat. Add the olive oil and 30g butter, then cook the diced onion for 5 minutes until softened. Stir in the garlic and cook for a further minute until fragrant.
Add the Arborio rice and stir continuously for 2-3 minutes, allowing the grains to lightly toast and become slightly translucent around the edges.
Pour in 1 litre of the chicken stock, season with salt and freshly ground black pepper, then cover with a lid. Transfer to the oven and bake for 45 minutes, or until most of the liquid has been absorbed and the rice is tender with a slight bite.
Remove from the oven and stir through the remaining stock, grated Parmesan and the remaining 30g butter until well combined. Spread the risotto onto a large tray or baking sheet and leave to cool for 15-20 minutes, or until comfortable to handle.
For the Arancini - Using lightly dampened hands, take approximately 40g of cooled risotto and shape it into a ball. Press your thumb into the centre, add a cube of mozzarella, then carefully seal the rice around the cheese and reshape into a neat ball. Place on a lined baking tray and repeat with the remaining risotto.
Prepare three shallow bowls: one with the flour, one with the beaten eggs and one with the panko breadcrumbs. Coat each rice ball first in the flour, then the egg, and finally the breadcrumbs, ensuring an even coating all over.
Lightly spray the arancini with cooking oil spray and arrange them in a single layer in the air fryer basket. Cook at 200°C for 10-12 minutes, turning every 3-4 minutes, until deeply golden and crisp on the outside.
Serve immediately while hot and crispy, with a bowl of warm marinara sauce for dipping. The crunchy coating and molten mozzarella centre are best enjoyed fresh from the air fryer.
