Garlic Bread Cheese Toastie

Garlic Bread Grilled Cheese — aka the carb-on-carb masterpiece nobody warned you about.

Ingredients
  

  • 2 tbsp softened butter
  • 1/2 tbsp garlic powder
  • 1/2 tsp dried parsley
  • 4 slices bread
  • 1 cup shredded mozzarella & cheddar blend
Optional Fresh Garlic Butter Upgrade
  • 2 tbsp softened butter
  • 1 clove garlic finely minced
  • Pinch of salt
  • 1/2 tsp chopped parsley

Method
 

  1. In a small bowl, mix the softened butter with the garlic powder and parsley until it’s smooth, creamy, and smelling mildly life-changing. You’re looking for silky, spreadable, and speckled with green.
  2. Spread that garlic butter generously on one side of each slice of bread. And I mean generously. Take it right to the edges — no dry corners, no regrets. This is where the crunch begins.
  3. Lay 2 slices of bread butter-side down in front of you. Pile half the cheese onto each — don’t be shy, this is not the time for restraint. Crown them with the remaining slices, butter-side up. Congratulations, you’ve just engineered greatness.
  4. Heat a large skillet or nonstick pan over low heat. Low and steady wins the cheese pull. Place the sandwiches in and let them cook for 4–5 minutes per side until deeply golden, crispy, and audibly crunchy when you tap them. Flip carefully — we’re building luxury, not chaos.
  5. Remove from the pan, slice in halves or dramatic diagonals (always dramatic diagonals), and serve immediately.
    Pair with tomato soup for the classic dunk, or your favourite dip if you’re feeling rebellious.
